Perbandingan Efek HPP dengan Pasteurisasi pada Antioksidan Jus Buah
Dibandingkan dengan pasteurisasi, teknik HPP dapat menjaga antioksidan pada jus buah agar tidak berkurang banyak. Pada pemrosesan dengan pasteurisasi, antioksidan pada jus buah berkurang dengan banyak karena adanya panas pada prosesnya.
