Turkish Maqluba – A Taste of Togetherness

About It

I was so excited when two of my Turkmen friends invited me for dinner. They would cook by themselves. Uniquely they did not cook Turkmen dish but a kind of Palestinian menu called Maqluba but in Turkish version. So it was about Turkish Maqluba, a Palestinian menu made in Turkish style by Turkmen guys. I said that Turkish Maqluba is “A Taste of Togetherness”, why? because we ate it together in the same big plate, not one person for one plate. In the real party, Maqluba can be very big in size, put in the one big plate eaten by many people at the same time. But that night, only three of us who cooked and ate that but I could still feel the spirit our togetherness. It was also kind of experience for me because generally in Indonesia we never in together in one big plate like this. We do “one person for one plate”.

Turkish Maqluba is a very simple food to make with simple ingredients. What you need to prepare are:

  1. Rice
  2. Potatoes
  3. Carrots
  4. Onion
  5. Beef
  6. Onion
  7. Oil
  8. Salt
  9. Yogurt

Those are all in amount as you like.

First of all, fry potatoes and carrots separately. Do not forget to add salt in each frying process.

After you have both fried potatoes and carrots, prepare the pan to start cooking  Turkish Maqluba.

Put some oil in the pan, continued by the slices of onions, fried potatoes, fried carrots, beef and then rice. After the rice, put again fried potatoes, fried carrots, and beefs. Make those all like long vertical layers.

Put the water into the pan, pay attention that water is maximally only about two centimeters from the top of the layers. Turn on the fire, make it small. You don’t need to do anything, just let it proceed by itself

After around 20 minutes, your Turkish Maqluba is ready.
Turn off your stove, put the pan out and drop Maqluba in the big plate that you’ve prepared.
Then you can add yogurt to make that Turkish Maqluba tastier.  For making it fresher, you may also add tomatoes, lettuces, and beans.
