Chicken Rendang Ingredients
1 kg whole chicken, chopped into 16 pieces
300 gr coconut milk
Salt, sugar, palm sugar
1/2 tsp white Pepper
3-4 tbsp neutral oil
Spices Paste
A thumb size of each ginger and turmeric
2 thumb size galangal
150-200 gr red long chili
10 small shallot
5 garlic cloves
2 tsp coriander powder
1/2 nutmeg
1 lemongrass, peel outer layer and use the white part only
3 candlenut
Aromatics
1/2 cinnamon stick
1 lemongrass, bruise
2 cloves
2 star anise
3 bay leaves
3 kafir lime leaves
How To Make Chicken Rendang
1. Heat oil in, stir fry paste until fragrant
2. Add aromatics, continue stir fry spices until darken in color
3. Add chicken pieces and coconut milk
4. Cook and stirring it frequently until chicken is tender and liquid mostly evaporated
5. Discard aromatics, Add salt, sugar, and palm sugar
6. Serve chicken rendang with steam rice
